Crab Cakes

Ingredients

  • 1/4 cup on mayonnaise or salad dressing  
  • 1 large egg
  • 1 1/4 cups of soft bread crumbs (about 2 slices of bread)
  • 1 teaspoon of ground mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tbsp medium green onions chopped
  • 2 cans 6 ounces each
  • 2 tablespoons of vegetable oil
  • 1/4 cup dry bread crumbs

Instructions

  1. Mix the mayonnaise (er, or Miracle Whip) and the egg together.  Stir in the remaining ingredients except oil and dry bread crumbs.  Shape mixture into 6 patties.
  2. Coat each patty with the dry bread crumbs.
  3. Heat the oil in a 12 inch skillet over medium heat.  Cook in oil over medium heat for about 10 minutes, turning over once, until golden brown and hot in the center.
